What is suji rava?

Suji (sooji) is coarsely milled wheat, made from the hard inner part of the grain. In South India it is called rava, and in English semolina. Suji, sooji and rava all mean the same ingredient; the difference between types is the grind:

  • Suji rava (this pack): medium grind, for upma, kesari, rava idli and dosa.
  • Chiroti rava: extra-fine, for chiroti, laddoo and soft sweets.
  • Bansi rava: made from bansi wheat, with a slightly coarser, golden grain.

How to use suji

  • Upma: dry-roast the suji until fragrant, then add it to a tempering of mustard seeds, urad dal, curry leaves, onion and vegetables with hot water. Use about 1 cup suji to 2½ cups water.
  • Kesari bath and sheera: roast in ghee, cook in water or milk, and sweeten with sugar or jaggery, cardamom and saffron.
  • Rava idli and rava dosa: mix with curd (idli) or rice flour and water (dosa) for a quick breakfast with no grinding.
  • Suji halwa and laddoo: roast in ghee and cook with milk and sugar, or bind with sugar syrup and coconut.
  • Crisp coating: use as a coating for rava fry fish, vegetables or cutlets.

Frequently asked questions

Is suji the same as rava and semolina?

Yes. Suji (or sooji) is the North Indian name and rava the South Indian name for wheat semolina.

Is suji gluten-free?

No. Suji is made from wheat and contains gluten, so it is not suitable for coeliac disease. For gluten-free alternatives, try our foxtail millet rava or jowar rava.

Should I roast suji before using it?

For upma, kesari and halwa, yes. Dry-roast it on a low flame for 5–7 minutes until it smells nutty and turns very slightly golden. Roasted suji keeps its grains separate and cooks without lumps.

How should I store suji?

Keep it airtight in a cool, dry place. Lightly roasting it before storing helps it keep longer in humid weather.
