Dhatu Organics Organic Sprouted Ragi Flour, also called nachni satva or ragi satva, is whole organic ragi (finger millet) that we soak until it sprouts, dry gently and cold-mill in small batches at our facility in Mysuru. The result is a fine, light, slightly sweet ragi flour for ragi porridge, mudde, rotti, dosa and malt. We have been making sprouted ragi flour since 2012.

What is sprouted ragi flour?

Sprouted ragi flour is made from ragi grains that are soaked in water until they just begin to germinate, then dried and milled. Sprouting is how kitchens in Karnataka and Maharashtra have traditionally prepared ragi, especially for nachni satva and ragi malt. It reduces phytic acid and tannins (natural compounds in the grain that bind minerals) and wakes up the grain's own enzymes, which gives the flour a milder taste and a smoother texture.

Sprouted ragi flour vs regular ragi flour

Sprouted ragi flour (nachni satva) Regular ragi flour
How it is made Ragi is soaked, sprouted, dried, then cold-milled Ragi is cleaned and milled directly
Taste and texture Milder, slightly sweet, very smooth Earthier and slightly coarser
Phytic acid and tannins Reduced by sprouting Not reduced
Best for Porridge, malt, satva, soft rotti, dosa Mudde, rotti, everyday cooking

Prefer the unsprouted version? See our Organic Ragi Flour, or compare every ragi product on our ragi page.

How we make our sprouted ragi flour

  1. Organic ragi: certified organic whole ragi, cleaned and graded.
  2. Soaked and sprouted: the grain is soaked and left to sprout.
  3. Gently dried: the sprouted grain is dried at a low temperature.
  4. Cold-milled: ground slowly so the flour is not exposed to high heat, then packed fresh in Mysuru.

Nutrition (per 100g)

  • Calcium: 364mg. Ragi is one of the richest cereal sources of calcium, with far more than rice or wheat.
  • Dietary fibre: 11g
  • Phosphorus: 283mg · Magnesium: 137mg

How to use sprouted ragi flour

  • Ragi porridge / ragi malt: whisk 2 tbsp into a cup of cold water or milk, cook on a low flame for 5–7 minutes, and sweeten with a little jaggery.
  • Ragi mudde: the classic Karnataka ragi ball, served with saaru or sambar. See our recipes.
  • Ragi rotti and dosa: knead with hot water for rotti, or mix into dosa batter.
  • Ragi laddoo and baking: roast lightly and mix with jaggery, ghee and cardamom, or replace part of the flour in cookies and pancakes.

Which pack should I buy?

The flour is the same in every size. Choose 500g to try it, 1kg or 2kg for daily use, and 5kg for the best value for families who cook with ragi every day.

Frequently asked questions

Is sprouted ragi flour the same as nachni satva?

Yes. Nachni satva (or nachani satva) is the traditional Marathi name for sprouted ragi flour, and ragi satva is used in Karnataka. It is also sold as sprouted ragi powder.

What is the difference between sprouted ragi flour and ragi malt?

Sprouted ragi flour is the plain flour, used for cooking and for making malt at home. Our Ragi Malt is a ready drink powder of sprouted ragi with almonds and cardamom.

Does ragi contain gluten?

No. Ragi is a naturally gluten-free grain. If you have coeliac disease, please contact us about how it is packed before ordering.

I have diabetes. Can I eat ragi?

Ragi is a whole grain with plenty of fibre, but it is still a carbohydrate food. If you have diabetes, please ask your doctor or dietitian how ragi fits into your meal plan.

Can I give it to my baby?

Many Indian families introduce ragi porridge when a baby starts solid food. Please talk to your paediatrician about when and how to introduce any new food, and start with a small, smooth, well-cooked portion.

How should I store it?

Keep it airtight in a cool, dry place and use a dry spoon. In hot, humid weather, refrigerate after opening and use it before the best-before date.

Cannot go back to regular ragi now

Once you try sprouted ragi you just cannot go back to regular. The texture is so much better and digestion is easier. My husband who hated ragi now asks for ragi dosas. Magic!

Good product overall

Nice fine texture, good quality ragi. I mix it with jowar flour 50-50 for rotis and it works great. Slightly more expensive than market but worth it for the organic certification.

Great for making ambali

Traditional Karnataka ambali made with this flour tastes exactly like what my grandmother used to make. The sprouting makes it easy to digest and very filling. Excellent.

Best brand for sprouted flours

I have tried 4 brands of sprouted ragi and Dhatu is the winner. The colour is darkest which indicates high anthocyanin content. Perfect for health smoothies.
