Dhatu Organics Organic Whole Wheat Flour is stone cold-milled whole wheat atta: the whole grain, with its bran, germ and endosperm kept together, ground slowly so the flour stays cool. It makes soft, wholesome chapatis, phulkas and parathas with a natural wheat flavour, and comes in 1kg and 5kg packs.

What is whole wheat flour?

Whole wheat flour (atta, gehun ka atta) is flour made from the entire wheat grain. Many commercial attas are roller-milled, which separates the grain into parts and recombines them. Our atta is stone-ground in one pass from certified organic wheat, so nothing is removed and nothing is added: no bleach, no maida, no improvers.

How to make soft rotis with whole wheat atta

  1. Mix 2 cups atta with a pinch of salt. Add warm water a little at a time and knead into a soft, smooth dough.
  2. Rest the dough, covered, for 20–30 minutes so the bran softens.
  3. Roll thin, cook on a hot tawa until bubbles form, flip, and puff over the flame.
  4. Brush with ghee and keep in a covered box to stay soft.

Stone-ground atta drinks a little more water than commercial atta, so add water slowly.

Which pack should I buy?

The flour is the same in both sizes. Choose 1kg to try it, and 5kg if you make rotis every day. Whole wheat flour keeps its natural wheat germ oil, so store the larger pack in two or three airtight containers and refrigerate one in hot weather.

Frequently asked questions

Is whole wheat flour the same as atta?

Yes. In India, atta means whole wheat flour, used for chapatis and rotis. Maida is the refined white flour made from only the inner part of the grain.

Is this chakki atta?

Yes. It is stone-ground (chakki) atta, milled slowly so the flour stays cool, rather than roller-milled.

Why are my rotis less soft than with commercial atta?

Stone-ground whole wheat has more bran. Use slightly more warm water, knead well and rest the dough for at least 20 minutes, and your rotis will be soft and puff well.

Does whole wheat flour contain gluten?

Yes. Wheat contains gluten, so it is not suitable for coeliac disease. For gluten-free flours, see our gluten-free range.
