How to cook red cowpeas

  1. Soak for 8–10 hours or overnight.
  2. Pressure-cook for 3–4 whistles, until soft but whole.

  • Chavli usal: the Maharashtrian dry curry with coconut and goda masala.
  • Karamani sundal: boiled cowpeas tempered with mustard, red chilli, curry leaves and coconut.
  • Alasande huli / sambar: Karnataka-style with tamarind and sambar powder.
  • Sprouts: soak, then sprout for 1–2 days for a salad with lemon and onion.

Frequently asked questions

Are red cowpeas the same as lobia?

Yes. Lobia (Hindi), chavli (Marathi), karamani (Tamil) and alasande (Kannada) all mean cowpeas. This pack is the red variety.

Is red cowpea the same as rajma?

No. Rajma (kidney beans) are larger and take longer to cook. Cowpeas are smaller, have a small eye, and cook faster.

How should I store them?

Keep airtight in a cool, dry place and use within 12 months.
