Its smaller, darker seed and thicker husk carry substantially more fibre and resistant starch than the polished Kabuli variety. Dhatu Organics sources Bengal gram from NPOP-certified farms, stone-cleaning and packing it without any polishing, bleaching, or additives.

In the Kitchen

  • Chana Masala / Pindi Chana — Punjabi dry-spice preparation with amchur and pomegranate
  • Sundal — South Indian boiled, tempered snack with coconut, mustard, and curry leaves
  • Sprouted Brown Chana — soak 12 hrs, sprout 36–48 hrs; protein bioavailability increases on sprouting

Soak for 10–12 hours. Pressure-cook for 5–6 whistles. The thicker skin holds up well in long-cooked curries without turning mushy.
