What is Sattu?
Sattu is flour made from Bengal gram (chana) that has been dry-roasted at high heat before milling. The roasting pre-gelatinises the starch, making sattu instantly soluble in liquid without any cooking — unlike raw besan, which must be cooked to remove its raw flavour.
