How to make sambar
- Pressure-cook ½ cup toor dal until soft and mash it.
- Cook your choice of vegetables (drumstick, brinjal, pumpkin, onion) in tamarind water with a little salt and turmeric.
- Add the dal and 2–3 teaspoons of sambar powder, a small piece of jaggery and water to the consistency you like, then simmer for 5–7 minutes.
- Temper with mustard seeds, dried red chilli, curry leaves and a pinch of hing in ghee or oil, and garnish with coriander.
Storage
Keep airtight, away from light and moisture, and use a dry spoon.
