Red Rice in Ayurveda

Classical Ayurvedic texts including the Charaka Samhita and Sushruta Samhita classify Rakta Shali as one of the superior rice varieties — recommended for convalescents, for those with digestive disorders, for lactating mothers and for maintaining ojas (vital energy). Its slightly astringent taste (from the tannins in the bran) is considered balancing for Pitta dosha in Ayurvedic medicine. This traditional knowledge aligns remarkably well with modern nutritional understanding of the bran's bioactive compounds.

Taste & Texture

Red rice has a nutty, slightly earthy flavour with a pleasant chew — more interesting than white rice and less assertive than black rice. The cooked grain is reddish-brown, separate and lightly sticky. It absorbs curries, dals and sambars beautifully. The flavour is robust enough to stand alone with just ghee and salt.

How to Cook

Rinse 2–3 times. Soak 30 minutes (optional). Cook at 1:2.5 rice:water ratio. Bring to a boil, reduce to low heat, cover and simmer 25–30 minutes. Rest covered for 10 minutes before serving. Alternatively, pressure cook: 3 whistles on medium heat with 2 cups water per cup of rice.
