How to Cook Bajra
Bajra rotis (the classic): Add hot water gradually to Bajra flour, kneading to a soft dough. Pat into thick rotis by hand (rolling is difficult without gluten) or use a roti press. Cook on a tawa over medium-high heat, pressing gently. Traditionally eaten with ghee, jaggery and raw onion or with mustard leaf (sarson ka saag). The combination of ghee and Bajra significantly increases fat-soluble vitamin absorption.
Bajra khichdi: Use whole Pearl Millet with moong dal, turmeric, ghee and rock salt. This traditional Rajasthani winter dish is highly nutritious and warming.
