What is Palm Sugar?

Palm sugar is made from the sap of the Palmyra palm (Borassus flabellifer) — one of the most ancient trees in Indian culture, known as the "Tree of Life" in Tamil Nadu. The flower sap is collected by trained climbers at dawn, then slowly reduced over wood fire to produce dark, mineral-rich sugar crystals. Unlike coconut sugar (from coconut palms), Palmyra palm sugar has a stronger, smokier taste and is especially prized in traditional South Indian and Sri Lankan cooking. It is known as Karupatti (கருப்பட்டி) in Tamil and has been used in Ayurvedic medicine for centuries.
