What does "kachi ghani" mean?
"Kachi Ghani" literally means raw or cold wooden-press extraction. It refers to the traditional method of pressing mustard seeds slowly in a wooden Ghani (a large wooden mortar and pestle type press) without applying heat — preserving the pungent allyl compounds and full fatty acid profile.
Why is mustard oil pungent and yellow?
The pungency comes from allyl isothiocyanate — a natural bioactive compound released when mustard seeds are pressed. The deep yellow colour comes from beta-carotene and other natural pigments in the seeds. Both are signs of authentic, unrefined oil. Refined mustard oil is pale and mild because these compounds have been removed.
