In the Kitchen
- Pindi Chole / Amritsari Chole — pressure-cooked with tea bags for colour, finished with bhuna masala and dried mango powder
- Hummus — blended with tahini, lemon, and garlic; use extra cooking water to thin to desired consistency
- Roasted Chickpea Snack — toss cooked chickpeas in olive oil and spices, roast at 200°C for 25–30 min until crisp
- Chana Pulao — folded into spiced basmati rice for a complete one-pot meal
- Chaat — combined with tamarind water, raw onion, tomato, and sev for street-style snacking
Soak for 10–12 hours before cooking. Pressure-cook for 4–5 whistles. For hummus, cook until very tender (6–7 whistles). Reserve the cooking liquid — it is rich in soluble fibre and starch.
Storage
Store in an airtight container in a cool, dry place. Best used within 12 months of purchase.
