What is Organic Brown Sugar?

There are two very different products sold as "brown sugar". The first — and most common commercially — is refined white sugar with a coating of molasses added back in. It looks brown and has a slight molasses flavour, but nutritionally it is nearly identical to white sugar. The second is genuinely unrefined brown sugar, where the molasses is never removed in the first place — it remains naturally bound to the sugar crystals from the initial sugarcane processing. Dhatu's is the second kind — and it is made from certified organically grown sugarcane.

Genuine unrefined brown sugar has irregular crystal sizes, a sticky texture from bound molasses, and a deep, complex flavour that you can taste even in small amounts. Artificial brown sugar (white sugar + added molasses) tends to have uniform crystal size and a simpler flavour. Dhatu's brown sugar is genuine — unrefined from the first press.

Does it behave differently in baking?

Yes — unrefined brown sugar retains more moisture in baked goods due to its molasses content, resulting in chewier cookies, denser cakes, and richer flavour. This is usually desirable and is why professional bakers prefer it.

Why has my brown sugar hardened?

Brown sugar hardens when it loses moisture. To soften, place a damp piece of bread or a slice of apple in the container overnight, or microwave briefly with a cup of water nearby. Store in an airtight container to prevent hardening.

Is it suitable for diabetics?
