Eaten as sama khichdi, sama kheer or sama upma, it provides genuine nourishment without taxing the system.
How to Cook
As rice substitute: Rinse 2–3 times. Use 1:2 millet:water ratio. Cook 15–18 minutes on low heat, covered. The tiny grains produce a light, fluffy result. Excellent with sambar, dal, curries and vegetables.
Sama khichdi: Little Millet with moong dal, cumin, ghee and turmeric — deeply nourishing, easy to digest and complete in protein.
Sama kheer: Simmer Little Millet in milk with jaggery, cardamom and saffron for a traditionally auspicious dessert.
Morning porridge: 1 cup millet + 2.5 cups water or milk, simmer 15 minutes with salt or jaggery and ghee.
