Dhatu Organic Proso Millet — The Fastest Ancient Grain, Rich in Protein & B Vitamins
Proso Millet (Panicum miliaceum) is one of the oldest cultivated grains in human history — documented in Chinese agriculture over 10,000 years ago and found in Bronze Age archaeological sites across Europe and Asia. Known in South India as Baragu or Variga, and as Cheena in Hindi, Proso Millet is experiencing a modern revival driven by its outstanding nutritional profile, exceptional water efficiency and complete freedom from gluten.
Dhatu's Organic Proso Millet is grown without synthetic fertilisers or pesticides, harvested at peak ripeness and minimally processed to preserve its natural nutrient content. Compared to rice and wheat, Proso Millet offers significantly more protein, more B vitamins and a lower glycaemic impact — all in a grain that cooks in under 20 minutes.
Why Proso Millet Stands Out
- Single ingredient: Organic Proso Millet (Panicum miliaceum)
- High protein: ~11g per 100g — among the highest of any common grain; provides all essential amino acids in good proportions
- Rich in B vitamins — especially niacin (B3), thiamine (B1) and B6; critical for energy metabolism, nerve function and skin health
- Naturally gluten-free — safe for coeliac disease and wheat sensitivity
- Low GI — slower starch digestion reduces post-meal blood glucose spikes
- Phosphorus-rich — 280mg per 100g; important for bone mineralisation, ATP energy production and kidney function
- Iron and magnesium — supports oxygen transport and muscle function
- Quick-cooking: ready in 15–20 minutes
- Certified organic — NPOP certified
Proso Millet & Protein Quality
Unlike most grains, Proso Millet contains relatively high levels of the sulphur amino acids methionine and cysteine — amino acids that are deficient in most legumes. This makes Proso Millet a complementary protein partner to lentils and beans in vegetarian diets, together providing a complete amino acid profile comparable to meat protein. For the 600+ million vegetarians in India, this complementarity has practical daily significance.
Proso Millet & Diabetes Management
Research published in food science journals shows that Proso Millet's carbohydrate structure — with a higher proportion of resistant starch and dietary fibre compared to white rice — results in a significantly lower post-meal glucose response. The grain is classified as a low-to-medium glycaemic food, making it a smarter grain choice for the 77 million Indians managing Type 2 diabetes.
How to Cook
As a rice substitute: Rinse, then use 1:2.5 millet:water ratio. Bring to boil, simmer covered for 15–18 minutes. Fluff with a fork — the texture resembles rice but slightly fluffier. Works as a 1:1 substitute for rice in any meal.
As porridge: 1 cup millet + 3 cups water or milk. Simmer stirring occasionally for 15 minutes. Add ghee, salt and vegetables for a savoury porridge, or jaggery, cardamom and nuts for a sweet preparation.
In khichdi: Replace or blend with rice — proso millet khichdi with moong dal is light, nutritious and easily digestible.
As upma: Dry roast briefly, then cook as regular upma — light, fluffy and far more nutritious than semolina-based upma.
