Dhatu Organic Whole Horsegram

 Black Gram (Urad) Dal

 Curry Leaves

Horse gram is high in iron, calcium and protein. It also has one of the highest calcium content among pulses and is one of the richest vegetarian sources of protein. It is also low in fat, high in carbohydrate content, low in lipid and sodium content, and it is a slow digestible starch, which makes it ideal for people trying to control diabetes and obesity.

Sprout the Horsegram for enhanced nutrition, better digestion and assimilation: Wash and soak the horsegram in water overnight. Next morning, drain the water completely and keep it in a bowl lightly covered with a cloth, or wrap it in a cloth. The horsegram will sprout in a day.

Pressure cook the sprouted horsegram with lot of water for three whistles, or until its cooked. Once cooked, drain the water and keep it aside. The excess water can be used to prepare a special rasam called "hurali kattu saaru" or "bassaru".

Chop the onion finely. Heat the oil in a pan, add mustard, bengal gram dal, urad dal. When the dals turn golden and the mustard starts to sputter, add the green chillies, curry leaves, and onions. Fry for 2 minutes and then add the cooked horsegram, grated coconut, salt and mix thoroughly. Add the lemon juice, turn off the heat and mix well. Garnish with chopped coriander leaves and serve hot.
